Q: Does this lock in place while holding the stone or is it necessary to hold the plunger down with your hand to keep the stone in the little holding cage?

A: Pushing the plunger down extends the jaws. Releasing the plunger closes the jaws, securely holding any object in place.

A: When you depress the button at the end it opens the prongs.
